Easy Peach Cobbler with Fresh Peaches–An ode to summer
I never want summer to end. I love all the seasons, but letting go of summer is always hard. And I think it’s partially because there’s nothing like peaches in the South in the summertime. This Easy Peach Cobbler with Fresh Peaches is my ode to Southern summertime peaches.
What’s the difference between a cobbler and a crisp?
I’m so glad you’re curious because, honestly, this little baking fact really excites me! A cobbler is called a cobbler because the biscuit-like top is “cobbled” like cobblestones. (Cute!) Cobblers a typically a bit denser because of that biscuit-like top and more pie-like. While crisps typically are lighter and usually contain oats.
Can I use Canned or Frozen Peaches for Peach cobbler?
Of course! This recipe works great with canned or frozen peaches.
To peel or not to peel peaches for peach cobbler?
Personally and time permitting, I like to peel my peaches for this cobbler and most of my peach recipes. You can leave the skin on, though! Some folks prefer it. Peach skin adds a slight bitterness, so feel free to add a couple of tablespoons of granulated sugar to the filling if you’d like the skin on your peaches but want to offset the bitterness.
Let’s make an Easy Peach Cobbler with Fresh Peaches!
This recipe is super easy and simple—another reason why I love baking this recipe. Let’s start with the filling!
In a skillet, add the butter and give it about 3 to 5 minutes to become beautifully browned. Once your butter is browned, remove your skillet from the heat.
Next, add your sliced peaches along with the lemon zest, lemon juice, vanilla extract, brown sugar, granulated sugar, nutmeg, cinnamon, and 2 tablespoons of flour. Give this a good stir and ensure everything is mixed in and your peaches and evenly coated in the delicious filling. Let this cool to room temperature while you work on the topping!
How to make the topping
For the biscuit topping for this cobbler recipe, grab a large mixing bowl and whisk together your dry ingredients. Once those are well combined, cut in your butter with a pastry cutter or food processor until pea-sized balls form.
(You can also use two knives in a criss-cross, knitting-like motion to cut in your butter if you don’t have a pastry cutter or food processor! If using this method, it’ll take about 15 minutes. But it’s made with love!)
Form a well in your mixing bowl and pour the buttermilk into the center. Begin bringing your dough together with a wooden spoon, then switch to your hands once the spoon isn’t cutting the mustard anymore. Your dough will be crumbly but will stick together when squeezed in your hand. This is perfect!
Time to top your Easy Peach Cobbler with Fresh Peaches! Roll about 1 to 2 tablespoons of dough into the palm of your hand and then flatten it to be about 1/2 an inch thick. These are your “biscuits” for the top of your peach cobbler. Continue making them and placing them in a “cobblestone” pattern across the top of your filling in your skillet. Allow some filling to show and not be covered by any topping. This will allow your peach cobbler to vent in the oven!
Time to bake!
Bake your Easy Peach Cobbler with Fresh Peaches at 400 degrees F for 25-27 minutes. Or until the top is golden brown and the peach filling is bubbling. This will also result in your house smelling like absolute bliss.

Easy Peach Cobbler with Fresh Peaches
Ingredients
Peach Filling Ingredients
- 4 tablespoons unsalted butter half a stick
- 6 cups peaches sliced and peeled
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar packed
- 1/4 cup granulated sugar
- 2 tablespoons flour
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
Topping Ingredients
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup brown sugar packed
- 1/4 cup granulated sugar
- 1/4 tablespoon cinnamon
- 8 tablespoons unsalted butter 1 stick
- 1/2 cup buttermilk (see notes below if no buttermilk on hand)
Instructions
- Preheat the oven to 400 degrees F.
- Add half a stick of butter to a 12-inch cast-iron skillet over medium heat. Allow the butter to brown for about 5 minutes. Remove skillet from heat. Add in peaches, lemon zest, lemon juice, vanilla, brown sugar, granulated sugar, nutmeg, cinnamon, and flour. Give all of this a good stir to ensure everything is evenly combined. Let cool to room temperature.
- While the filling is cooling, whisk together 2 cups of flour, baking powder, salt, and a sprinkle of cinnamon in a large bowl. Then, cut in 1 stick of cold butter using a pastry cutter or a food processor. Cut the butter into the dough until pea-sized balls form. Add in the buttermilk. Bring the dough together with a wooden spoon and then switch to your hands once the dough starts to stick together. The dough will be crumbly and a bit dusty.
- Form balls of dough to top the filling by rolling anywhere from 1-2 tablespoons worth of dough into your hands. This doesn’t have to be precise or perfect. Flatten the ball in your palms to be about half an inch thick. Place flattened dough on top of filling in skillet. Repeat this until your filling is topped to your liking leaving a few sections uncovered for it to vent in the oven.
- Place your skillet in the oven and bake for 25-27 minutes, or until the top is golden brown and the filling is bubbling.
- Serve with vanilla ice cream. Enjoy!
Notes
- Feel free to sub fresh peaches for canned or frozen peaches for this recipe. If using frozen peaches and they are watery, add one extra tablespoon of flour to the filling.
