Buttermilk is simply one of the best ingredients to make food delicious. And we’ve all gone to make a recipe and realize we don’t have any buttermilk in the fridge. Luckily, making homemade buttermilk is simple, quick, and you probably have the ingredients to make buttermilk on hand! Let’s make a buttermilk substitute.
What is buttermilk?
Simply put, buttermilk is fermented milk. It’s thicker than milk but a tad bit runnier compared to greek yogurt. Buttermilk has a tangy/vinegar flavor, similar to plain yogurt. Not only does buttermilk add a delicious flavor and balance to baked goods, but it also assists baked goods in rising by activating the gas in baking soda. It’s a magical ingredient.
What can I use for a buttermilk substitute?
Luckily, making homemade buttermilk is simple! All you need is regular milk and white vinegar. Or, regular milk and lemon juice. Two ingredients that take about five minutes total to whip up! And if you don’t have either of those ingredients, you can also substitute buttermilk for plain yogurt. However, I recommend using either lemon juice or white vinegar if you have either of those handy.
How to make buttermilk substitute?
To make your buttermilk, simply add one tablespoon of white vinegar or lemon juice to a one-cup measuring cup, then, fill the rest of the cup up with milk. Give it a good stir and let it stand for about 5 minutes. And Viola! You have homemade buttermilk.
If you don’t have white vinegar or lemon juice on hand, you can also substitute buttermilk with plain yogurt.

- 1 tablespoon white vinegar (or lemon juice)
- 1 scant cup milk (scant cup is a cup shy of 1 tablespoon)
Instructions
- Add white vinegar or lemon juice to a 1 cup measuring cup
- Fill the rest of the cup with milk, give it a good stir, and let it stand for 5 minutes
